Lowcarbo lasagne

lasagne-ferdig-xThis lasagne is the perfect meal for relaxation – either on the coach in your pyjamas or when you want to invite someone over. Besides,  the dish is gluten-free, lowcarbo, reduced lactose and fructose. Therefore suitable for most stomachs. Hope you will love this lasagne as much as we do.

Lowcarbo lasagne
(3 – 4 persons)

You need
1 squash
1 onion
1 clove of garlic
Olive oil
400 grams minced meat
1 can of peeled and chopped tomatoes
Spices: Basil, oregano, salt and pepper
1 ½ dl cream
125 grams white cheese, preferable mozzarella

If intolerence towards milk proteins: Use grated mozarella, can be bought in a health food store.

The lasagna sheets

Start with making lasagna sheets from the squash. Remove the tip in both ends and make thin, long, slices lengthwise from the squash. Use a big knife, it will make it easier. Put the slices on a piece of paper towel (kitchen paper) and sprinkle with salt. Let them lie there and ”sweat fluid” until the meat sauce is ready.

1 ½ dl cream (ordinary or lactose free)

Cut the onion and the garlic and let it fry in olive oil. Add the minced meat and chop it into small bits. Let it fry till well done. Add the peeled tomatoes and the cream. Let the meat sauce boil lightly for about 20 minutes.

Ca. 125 grams white cheese, preferably mozzarella

The Lasagne
Put half of the meat sauce in the pan, then the sheets of squash, thereafter the rest of the meat sauce. Sprinkle with cheese. Gratinate in the middle of the stove for about 20 minutes.

Serve with a salad. We have used a prefabricated bag of salad and added cucumber and tomatoes. If you suffer from frutose intolerence it may be sufficient with the tomato in the lasagne. We sprinkled the salad with the following dressing:

Salad dressing
Make a suitable amount of dressing portioned like this: ¼ white wine vinegar and ¾ of olive oil. Add salt and pepper.
